Sweet Potato Custard

Hey Beauties,
I cooked my sweet potatoes about 20 minutes, this can vary. I pinched a fork to make sure it was cooked thoroughly.

For my recipe :
1 cup of almond milk ( I use Silk )
1 small piece of a cinnamon stick
Half of a whole nutmeg
A dash of stevia  and ginger grounded
And of course the sweet potato!
Then just blend ( I use a vitamix)
This was the final result, I made it on strong side cause I like that strong taste. But, if this is your first time trying it maybe a softer taste is better. So instead use powders, for example I use to have a hard time with nutmeg over the years (so we used powder) I liked it now and we use whole.

Inspiration

Hey Beauties,

How and when and what got me inspired?

Growing up I watched television a lot, but not so much like kids do today! Believe me! However, I can't prove that because every parent is different. But, there are a lot of article out there on how  bad TV really can be. Anways, I was a huge addicted fanatic fan of the Olsen Twins. They had me crazy with collecting their VHS ( ahh I feel old haaa) and they had books that had me reading. But, truth be told I lived in their bubble for a long time.
Till maybe this period of their life. (Roughly)
Lucky me, in junior high I meet this girl who loved books and she became my inspiration to read other books beside their books. This is where  Roald Dahl came into my life and my favorite book of course!
As I got older, education along with reading become a big inspiration for me. Again, television was something I still watched and I got inspired by Hilary Duff ( still a big fan and it is her birthday today!)
This is where it all started with Kimberly and my lifestyle change. I saw Hilary post a picture on twitter of this green thing and I was like what is that...
The rest is history!

So, as you can see a lot things inspire me, but recently my biggest inspiration has   become myself alone and meditation ( a new obsession) which I love!

PS- You would be glad to know, I don't watch TV so much anymore!

Gratitude

In the past year, I have learned a lot about how things can affect your attitude such as people, internet, and of course food! I am thankful for my parents, my fiance , and my really close friends. However, to be realistic sometimes it not enough. Your parents might think something different than your own thoughts. You can argue with your fiance.Your friends might not always be there even if they say they are. I am just being honest not depressing here.  I am truly love everyone who is in my life and there are days, I wish I can do more for them. Overall, I am thankful for life.

I hope this does not come off strong or in the wrong way, but I am grateful for being alive. I am thankful that I have been able to have food in my life. While there are others in this world who have to line up in shelter just to get free food everyday and if they are lucky enough they will get it.Everyone thinks as hunger is only seen in "poor" countries like Africa or South America. Truth be told here in the America one in every six people suffer from hunger. The worst part is statistically speaking it gets worse every year. So see, I am thankful for my parents.  http://feedingamerica.org/

A video of photos dealing with hunger, watch you desire... click here

I am grateful for my fiance, because of love and the different views he has in life. Life should not always be about what is right or wrong. It is about having an open-mind about things, and I tend to not always do that I admit. Life is not perfect, but I feel a sense of love and security to me that is enough to be grateful.

As weird as this sound, I am thankful for the sun without we won't have plants. And without plants we would have no food or even oxygen. Life is an on-going circle.

I am thankful for some good close friends I have had over the years since high-school, they know who they are. Thanks to them I can smile, laugh, and just have a good time.

I am thankful for other things that affect my life such as Kim's Blog . I am also thankful for things such as meditation and animals. I am thankful for many things the list can go on.....

Here are some organazations that are close to my heart:
Red Pandas
Girl Up
ASPCA

BUT my biggest gratitude is myself and the power I have had over the years to grow as a person, but I can not say I have done it alone. Through it all, I am happy for who I am and what I have become.

PS- Happy International Day of Peace

My First Time Organic Kabocha

Hey Guys,

This week, I made a Kabocha it was my first time trying and hearing about it. Why? I dislike plain old squash. However, I was intrigued by Kimberly Snyder 's recipe plus I like trying new things.  I did a little research ....

Kabocha has Iron,Vitamin C,Calcium (not much), Folic Acid (imagine that), and more. Fun Fact it is so much sweeter than Butternut Squash.

Now for the cooking wash the Kabocha and put it in the oven at 350 degrees for 45 mins to an hour. Unless your Kobocha is really big. Once it is cook it will be easier to cut as well!
After it was cooked I cut it in half and cleaned it. You can dry the seeds inside and eat them if you like.
I added half a tomato and chopped a whole carrot.
I added spices I had at home such as tumeric, dash, and iodine salt.

I added a small spoon of coconut oil. Yummy!!
And I cover it with Nutritional Yeast Flakes (Guilty).  Finally I put it in the oven to warm it up at 300 10-20 minutes. (depends how warm or hot you like it)
Eat up! If you like it to be more sweet you can add organic honey or maple.
You can be simple and not refill it and just eat it with coconut oil and maple syrup.

Principles

Kimberly Snyder 's  Principles are listed here.

I think my main principle that I practice everyday is drinking a green glowing smoothie. I follow this religiously, because has become my practice for about two years now. The energy I feel from drinking it is like a little child on a sugar high, the only difference is it last longer and it is healthier of course! It is best to drink it in the morning on empty stomach, sometimes I put lemon for detox reason or because it just taste good. This is the original GGS !!! I however switch up my greens a lot when I can and I always love putting banana to make it sweet. When I can I put parsley or mint, refreshing and very energizing. Besides it being ideal, don't forget the amount of vitamins and minerals you are putting into your body already. Therefore, you are starting your day right! Just to add to it all remember you are also getting your protein and fiber. Just know drinking a green smoothie in morning is best thing you can do! When I first started, I actually loved it. The only thing I had to deal with was withdraws of sugar and pretty much headaches at first. But, once it is part of your lifestyle you might actually want to drink more!

Other principle that became second nature for me when I started this lifestyle was eating for fruits and vegetables overall. I only eat meat once a day, unless there is some special event in my life. However, I always usually drink the GGS so I don't guilt trip myself about it.  Now, if I stay over someone house this a little more complex of a matter. Regardless, I ALWAYS eat light to heavy no matter what. Another thing is if I don't have enough vegetables or fruits in my system let us just say you won't want to be around me. Sorta like the average "typical" American that don't have their coffee in the morning. Also, compare to how I use to eat, I learned more about other cultures and foods over all. For example, I love bok choy on my soup. Something I might never looked into if I did not change my way of thinking. I am also more open about other things like quinoa and different salads.

In the past, I have cut out dairy completely, however this principle is more challenging because I have to eat out a lot and don't know what has dairy or not. But, I try my best and I can't remember the last time I had actual cow milk!

As they always say perfection does not exist!

A lifetime bucket list and a Wish come true

I did a similar blog in my other blog, which was short and sweet. But for Kim's assignment I will share more.

This summer as a graduation present my mother gave me a gift of a lifetime. There was two places I always wanted to go Paris and to London. However, I only wanted to go to The Roald Dahl Museum and Story Centre , which was like about almost three hours from our hotel!
Many people that read his books, might not know he was a fighter pilot in World War Two. This the helmet he used.
If you ever watched or read Matilda, this photo is something that you will find interesting. Blake here describe how Dahl wanted Miss Trunchbull to look like.

This is the front the museum.  Next door was a knitting shop and they sold fabric (all that stuff). They even give lessons to near locals as well.
This is a food blog, so I will share what I had healthy or not. So I had the Jacket Potato with Chicken ( they don't have corn that day bummer) but that salad had to be organic because it tasted so fresh and good! And my mom till day says that the potato was too, because she swear it grown in their farm which honestly can be true! I order a Presse , so good I wanted another one!

We walk outside a bit and  yes it was narrowed, but we got lucky it was beautiful out that day. The amount of green was really breath taking!

If it where for me I would walk in a place like this everyday, but I love the city too. I went to this museum because growing up and till this day Ronald Dahl is one of my favorite authors. The adventures I have taken with his book as young child can't be put into words! But going here was like meeting him it was truly beautiful. To be honest, it truly touch my heart when I was eating and I saw a lesson going on in their classroom. This man was a true hero, to many in my generation and still is today. If you ever go to London, I really encourage anyone who has children to go or even you if you loved his book.

Another Romaine Wrap

In my other blog you got to know a little about my eating habit and some progress I made with food. One thing that is always in this house is Romaine Lettuce.  Just so you know, this is a simple and not artsy blog and do this when I have time. Therefore these food blog are very simple. So lets start, as always I worked with what I had at home.
There are five leaves of romaine and half a cucumber. As always I have the process of cleaning it with apple cider vinegar.
These are actually organic carrots they look funny (hehe). I used two carrots and used a grater. Avocado a whole one, some red onion just for taste (raw) and half a lime.
With the ingredients above I mixed them up in a bowl, feel free to add more color or even spices for taste!

Here is fun and last part you fill them in with the filling, don't overload or once you roll the romaine letter it will crack in half if you do. That is pretty much it. Warning these will fill you up I promise! I should know I am a heavy eater.
