Inspiration

Hey Beauties, 

                      How and when and what got me inspired?


Growing up I watched television a lot, but not so much like kids do today! Believe me! However, I can't prove that because every parent is different. But, there are a lot of article out there on how  bad TV really can be. Anways, I was a huge addicted fanatic fan of the Olsen Twins. They had me crazy with collecting their VHS ( ahh I feel old haaa) and they had books that had me reading. But, truth be told I lived in their bubble for a long time.
Till maybe this period of their life. (Roughly)
Lucky me, in junior high I meet this girl who loved books and she became my inspiration to read other books beside their books. This is where  Roald Dahl came into my life and my favorite book of course!
As I got older, education along with reading become a big inspiration for me. Again, television was something I still watched and I got inspired by Hilary Duff ( still a big fan and it is her birthday today!)
This is where it all started with Kimberly and my lifestyle change. I saw Hilary post a picture on twitter of this green thing and I was like what is that...
The rest is history!

So, as you can see a lot things inspire me, but recently my biggest inspiration has   become myself alone and meditation ( a new obsession) which I love!

PS- You would be glad to know, I don't watch TV so much anymore!

Gratitude


In the past year, I have learned a lot about how things can affect your attitude such as people, internet, and of course food! I am thankful for my parents, my fiance , and my really close friends. However, to be realistic sometimes it not enough. Your parents might think something different than your own thoughts. You can argue with your fiance.Your friends might not always be there even if they say they are. I am just being honest not depressing here.  I am truly love everyone who is in my life and there are days, I wish I can do more for them. Overall, I am thankful for life.

I hope this does not come off strong or in the wrong way, but I am grateful for being alive. I am thankful that I have been able to have food in my life. While there are others in this world who have to line up in shelter just to get free food everyday and if they are lucky enough they will get it.Everyone thinks as hunger is only seen in "poor" countries like Africa or South America. Truth be told here in the America one in every six people suffer from hunger.The worst part is statistically speaking it gets worse every year. I am grateful for my fiance, because of love and the different views he has in life. Life should not always be about what is right or wrong. It is about having an open-mind about things, and I tend to not always do that I admit. Life is not perfect, but I feel a sense of love and security to me that is enough to be grateful. 


As weird as this sound, I am thankful for the sun without we won't have plants. And without plants we would have no food or even oxygen. Life is an on-going circle.

I am thankful for some good close friends I have had over the years since high-school, they know who they are.Thanks to them I can smile, laugh,and just have a good time.

I am thankful for other things that affect my life such as Kim's Blog . I am also thankful for things such as meditation and animals. I am thankful for many things the list can go on.....

BUT my biggest gratitude is myself and the power I have had over the years to grow as a person, but I can not say I have done it alone. Through it all, I am happy for who I am and what I have become.

My First Time Organic Kabocha

Hey Guys,

                        This week, I made a Kabocha it was my first time trying and hearing about it. Why? I dislike plain old squash. However, I was intrigued by Kimberly Snyder 's recipe plus I like trying new things.  I did a little research ....

Kabocha has Iron,Vitamin C,Calcium (not much), Folic Acid (imagine that), and more. Fun Fact it is so much sweeter than Butternut Squash.

Now for the cooking wash the Kabocha and put it in the oven at 350 degrees for 45 mins to an hour. Unless your Kobocha is really big. Once it is cook it will be easier to cut as well!
After it was cooked I cut it in half and cleaned it. You can dry the seeds inside and eat them if you like.
I added half a tomato and chopped a whole carrot.
I added spices I had at home such as tumeric, dash, and iodine salt.

I added a small spoon of coconut oil. Yummy!!
And I cover it with Nutritional Yeast Flakes (Guilty).  Finally I put it in the oven to warm it up at 300 10-20 minutes. (depends how warm or hot you like it)
Eat up! If you like it to be more sweet you can add organic honey or maple.
You can be simple and not refill it and just eat it with coconut oil and maple syrup.
